OUR PRODUCTION PROCESS
In our factory, numerous analyses are conducted for quality control purposes. The analysis process begins with the selection of raw materials. When the selected raw material arrives, various samples are taken and measured based on the tonnage and the type of product. The measurements performed during input control include protein, fat, ash, fiber, and moisture. In addition, sensory and visual checks are conducted. Products from our approved suppliers are examined periodically both in our own laboratory and in accredited external laboratories. Our priority tests are microbiological tests (Salmonella, L. monocytogenes, enterobacter) along with mold and yeast analyses. For plant-based products, we regularly perform and commission pesticide analyses, focusing primarily on total toxins. Heavy metal and dioxin analyses are also conducted according to input risk assessments. We obtain declaration letters from our suppliers stating that they will not cause chemical or radiological contamination.
The oil we use in our production is one of our essential raw materials, both for coating and for its aromatic properties. For this reason, we check the FFA (free fatty acidity) and peroxide values of every input and perform product acceptance only if the values are suitable. During the production process, samples and products from different points are analyzed to guide manufacturing. The analyses performed during this process include the product's nutritional parameters: protein, fat, ash, fiber, and moisture. These are conducted for every product before it completes the production cycle.
We value the quality of the water used in our products as much as the products themselves. Therefore, we base our water analysis stage on drinking water criteria. To prevent the risk of contamination from ambient air and machinery, total viable counts and mold-yeast levels are checked, and personnel hand swab analyses are performed. In the final stage, nutritional component analyses are repeated as end-product analyses.
In addition to nutritional component analyses, tests targeting threats to food safety are also performed. Inspections are carried out according to the intervals determined in the risk analysis. The analyses conducted include: Salmonella, L. monocytogenes, enterobacter, yeast-mold, total aflatoxin and toxin variants, heavy metals, dioxin, FFA, and peroxide analyses. To prevent contamination from packaging, migration analyses are obtained from our suppliers. Pre-shipment quality control analyses are performed by taking various samples from the products to be shipped, depending on the shipment volume.
